The Oak Room at Adare Manor awarded with Michelin Star

  • Adare Manor

Two years following its highly anticipated debut, The Oak Room at Adare Manor has received Michelin star recognition. Head of Wines & Beverage Jurica Gojevic was also awarded the new Sommelier Award 2020 at the Michelin Guide to Great Britain & Ireland.

As the property’s only fine-dining restaurant, The Oak Room provides a genuine taste of the best that contemporary Irish cuisine has to offer while inviting guests to explore the vast bounty of Ireland.

Helmed by Head Chef Michael Tweedie - originally from Devon and runner-up for 2017’s San Pellegrino Young Chef Award – The Oak Room plays a leading role in redefining Irish fare in an unparalleled setting overlooking the River Maigue.

Recognition by the world’s premier culinary authority has always been the vision. Even before Adare Manor opened its doors, the pre-opening food and beverage team embarked on a nine-day gastronomy road trip to source the country’s best produce from local purveyors and artisans, and have continued doing so with a more recent five-day trip around the country in September 2019.

An essential step in building The Oak Room’s core pillar of tasting the terroir, these trips have become an inspiration for the refined dishes on the menu that celebrate the country’s vibrant landscape.

“We are proud to now stand among the finest restaurants in Ireland and the world with Michelin’s recognition, which marks a new chapter for Adare Manor. A labour of love from the very start, Adare Manor was created to delight, astonish, and impress – and we continue to hold ourselves accountable to that vision today, which is vividly alive in our guest experience, and even further reflected by our now recognised world-class culinary program. This recognition comes down to the dedication and commitment from Head Chef Michael Tweedie and our entire culinary and front of house teams in The Oak Room, and their passion for the service they are providing our guests.” – Adare Manor CEO Colm Hannon

“What we have created is a testament to the team’s passion and dedication for showcasing the very best; from the produce we source, to the highest level of service that we provide. The resort experience has continually evolved since we first opened our doors and The Oak Room has been a big part of this evolution. Michael Tweedie and the restaurant’s exceptional culinary and front of house teams have worked hard to offer guests something exceptional and unique.” – Adare Manor General Manager Paul Heery

“Since our initial debut nearly two years ago, we have worked so hard to bring The Oak Room to where it is today. Our entire kitchen and front of house teams have worked very closely together to create a warm and hospitable fine-dining environment. We are so, so proud of being recognised by Michelin today and it’s a testament to how we, as a team, have grown along the way. Listening to our guests and working so closely with the community of producers that we have created across the island has been central to The Oak Room becoming a Michelin star restaurant. I couldn’t be prouder." – The Oak Room Head Chef Michael Tweedie

“It’s wonderful to be part of such a strong and vibrant food and beverage team in The Oak Room  at Adare Manor. Winning a Michelin star is a terrific achievement for all the team and I am very honoured to win the first Michelin Sommelier Award 2020. It is always a privilege being considered for awards, but the most rewarding part of this role is making sure every guests’ experience is as interesting, enjoyable and satisfying as possible.” — Head of Wines & Beverage Jurica Gojevic

Today, the community of growers, farmers, fishermen and producers featured across Adare Manor menus are from all four corners of the island. Closer to home, Michael Tweedie and his team forage & gather ingredients from the estate grounds too, for guests to experience a taste of Adare Manor itself.

The Oak Room is polished and sophisticated, yet relaxed. Throughout the year, Restaurant Manager Liam Simpson, formerly of Chez Bruce, and The Oak Room team guide guests on a journey inspired by the season in which they are dining. Guests can choose a three-course à la carte fixed price menu or opt for a tasting market menu.

An extensive and adventurous wine-list, curated by Head of Wines and Beverage Jurica Gojevic, offers thoughtful pairings for both menu experiences to perfectly complement each dish.

On the menu, exquisite seafood, sustainably farmed meats and game, and the bright flavours of freshly-picked vegetables take guests on a seasonally-focused experience through the distinctive terroirs of Ireland.
